We are very confused! We both have access to Adoption pay through our employers...but are able to both take adoption leave together at the same time or do we have to split the adoption leave/pay between the two of us. We are finding it really difficult to find the correct information online. Does anyone have any idea what the rules are?

You can only have one set of adoption pay/leave but you can share it. You don't have to take it at the same time if you decide to share.
I'm far from an expert but my understanding that if you share you lose some of the value. I'd get some expert advice for your own situation - try ACAS
I’m no expert AT ALL. However I’ve done so much research as I too have been confused (as is my manager) so I echo what Serrakunda says.
Sometimes I explain it as if you swap the names adoption leave with maternity, it can make it easier to understand. Only one partner can take maternity/adoption leave, the other is left with paternity leave.
If both are eligible for shared parental leave, then this may mean more research or questions for you but it basically says whoever takes paternity leave can then have longer off by sharing the other partner’s leave.
Also no expert but looked on government website and I too understood that you can have 1 lot of adoption leave (with the same rights as maternity leave) and the other then has paternity leave.
Maternity is up to 12 months with statutory pay for 9 of them, plus anything your employer wants to give you.
Paternity is 2 weeks, I believe.
My husband will take paternity and then intends to tag on some annual leave so that we're both off together for longer.
Sidenote, if you foster to adopt, you're entitled to Foster carers allowance on top - my SW told me that
